Ingredients for 4 portions
- 2 medium red onions
- Olive oil
- 2 large potatoes
- 4 medium courgettes
- Salt and pepper
Preparing potatoes and courgettes together
Peel the potatoes and cut them into large pieces, cut the courgettes and onions into slices.
Put all the vegetables together in a large pan, add half a glass of oil, salt, pepper and cook over high heat for a few minutes.
Then cover and, turning often, continue to cook over moderate heat, until the vegetables are well cooked and mixed. Do not add water, broth or tomato.
